Lemon Liscious Cupcakes
Greetings, and a prosperous 2015 to everyone. To get the year started, let’s celebrate life with these easy cupcakes. Quick to make and moist to the bite, flavoured with lemon to make them taste just right! This recipe can be altered to suit your tastes; remove the lemon and add orange, remove the orange and add passionfruit…whatever you like. If you want chocolate, then use a slab of your favourite, chopped up and added into the mix with a tablespoon or two of rich cocoa powder. Just remember when adding something like cocoa powder, you will need to add a little more milk to keep the cupcakes moist, or why not add some orange juice to create a decadent chocolate orange version. Let your creative juices flow, passion in abundance awaits.
INGREDIENTS: 1 ½ cups Cake Flour ; 1cup Castor Sugar; 120 gram Butter; 1/3 cupMilk;  2Free Range Eggs; 1teaspoon Baking Powder; 1 zest Medium Lemon; 1juice squeezed Lemon.

Topping : 1 tub Marscapone Cheese; 120 gram Butter; 1 ½ cups Icing Sugar; 1 juice Squeezed Lemon

Method :
Preheat oven top 180 deg celcius.
Place 12 cupcake cups into a muffin baking tray.
Cream butter and sugar until fluffy. Add eggs, one at a time, beating in-between, until mixed in.
Add the lemon zest and juice.
Then add your dry ingredients in three parts, alternating with the milk.
Spoon mixture into cups about ¾ to the top. Bake for about 20 mins.
Leave to cool on a rack.
To make the topping simply mix the butter in a mixer until soft, add the icing sugar, marscapone cheese and lemon juice. Mix until smooth. It becomes quiet a firm mix, which is great for piping onto the cupcakes.
To garnish I prepared sliced lemons that were simmered in a sugar stock syrup for about 25 mins. Also I simply chopped up tennis biscuits and sprinkled them onto the topping. You can add fresh mint, chopped up chocolate, dried fruit, anything you really want…that’s edible and delicious of course.
